This baked red lentil falafel salad from the Kitchn is absolutely stunning to look and delicious to taste. I love that you don't have to cook the red lentils, just soak them overnight and pop them in the food processor. Placed on a bed of deep green kale and bright carrots shaved into ribbons it is a vibrant, healthy, and beautiful salad. Don't forget a tahini dressing. Since you will be making many falafels, you can have them in a wrap the next day.
