Every summer I get out the mandolin and start thinly slicing all manner of items for a crisp summer salad (this one includes zingy oranges as well). Once they are dressed and salted and peppered and vinegared and sit for a few minutes they become absolutely wonderful as the flavors meld; and they are never very heavy & always refreshing.
This special salad - recipe here - is no different. It's from a wonderful blog called Soul Life Times - do try it out; the fennel is especially lovely in this salad. Fennel is always a great surprising addition and on a mandolin the fibers break down and becomes the perfect salad ingredient. Pistachios would be a wonderful touch as well or a salted cashew.
